Despite the fact that there were several great brunches downtown to have taken mother to for Mother's Day I opted to have lunch at my place. Bon Appétit (June issue) just came in the mail this week and so I found a few Latin inspired recipes that sounded perfect. They were. Shrimp and Scallops with Mango Avocado Salsa, Rice with Squash and Pumpkin Seeds and Toasted Coconut Ice Cream. Lots of flavors came togther in the main dish: lime, jalapeno, cumin, tequila, shallot and garlic. The toasted coconut ice cream recipe sounded great though I did not follow it. I simply toasted some shredded cocount in the oven and sprinkled it over Coconut Almond ice cream from the Fresh Market. You can see the recipes in the magazine.

And we will continue to celebrate with food this week as the Memphis in May Barbecue Cooking Contest gets underway later in the week.

Your food looks delicious. I think I always comment about your food posts because I really, really, miss good food down here. It's not that it's bad, it's just plain and not very novel.
